ピノ・グリ発酵終了です!


Pinot Gris finished fermentation today.

今年のピノ・グリ、発酵中特に問題なく順調に発酵終了しました!今は「にごりワイン」状態。いい感じのコクが出ています。

ワイナリーの他のメンバーも結構興奮気味。

This year's vintage of Pinot Gris stopped fermentation today without any problem during fermentation period.

It's now cloudy color and has rich flavor.

Other staff in the winery also found the situation of Pinot Gris exciting and all

are looking forward to how it turns to be.

一方で樽発酵のソーヴィニヨンブラン。このところ外気温もだいぶ下がってきたこともあり、発酵がスローダウン…う~ん。昨年のファンキーバッチに続き、やはり色々気を使います。対応などしばし思案中です~

On the other hands, Sauvignon Blanc is still keep fermenting in the wine barrels.

Due to this recent low temperature, the speed of fermentation is getting slowing down.

Now, I'm thinking how I will deal with it.
